Honey Roasted Carrots!
*Great Holiday Side dish!
Ingredients:
4 lb baby carrots
½ cup of honey
2 tablespoons cinnamon
2 tablespoons nutmeg
Drizzle of olive oil
Salt & Pepper to taste
Instructions:
Preheat the oven to 400. In a bowl, combine carrots, cinnamon, nutmeg and a pinch of salt & pepper. Drizzle with plenty olive oil and toss to coat.
Spread carrots out on a sheet pan. Drizzle with honey.
Roast for 15 minutes or until carrots become tender and start to caramelize.
Note: This makes a big batch and therefore it is an easy, healthy and yummy side dish to bring to any Holiday Party! It is also great for meal prep if you want to enjoy these throughout the week!
Carrots are high in beta-carotene and fiber! They are also a great source of antioxidants. They are rich in vitamin A, C, K, and B8, as well as pantothenic acid, folate, potassium, iron, copper, and manganese!
